Ingredients

Chicken & Seasoning

  • 1 lb boneless skinless chicken breasts (about 2 large)
  • 2 Tbsp olive oil
  • 1 ½ tsp dried parsley flakes
  • 1 ½ tsp garlic powder
  • 1 tsp fine sea salt
  • ½ tsp ground black pepper

Pasta & Sauce

  • 8 oz spaghetti (226 g)
  • ½ cup salted butter
  • 6 garlic cloves, minced
  • ½ cup freshly grated Parmesan cheese (divided)
  • 1 Tbsp fresh parsley, diced (optional for garnish)

Instructions

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup pasta water, then drain.
  2. Season & Cook the Chicken
    In a bowl, mix olive oil, dried parsley, garlic powder, salt, and pepper. Slice chicken breasts into 4 thin filets. Coat well.
    Heat a nonstick skillet over medium-high. Cook chicken 3 min per side until golden and internal temp reaches 165°F (74°C). Remove, cover with foil.
  3. Make the Garlic Butter Sauce
    Lower heat to medium-low. Melt butter in skillet, add minced garlic, and sauté 2 minutes (don’t burn!). Spoon half the sauce into a small bowl.
  4. Combine Pasta & Sauce
    Toss pasta in remaining sauce. Add ¼ cup Parmesan and ⅓ cup pasta water. Adjust consistency with more water if needed.
  5. Assemble & Serve
    Slice chicken, place over pasta, drizzle with reserved garlic butter. Top with remaining Parmesan, parsley, and a pinch of pepper. Enjoy! 🍝🧄
