Ingredients
Chicken & Seasoning
- 1 lb boneless skinless chicken breasts (about 2 large)
- 2 Tbsp olive oil
- 1 ½ tsp dried parsley flakes
- 1 ½ tsp garlic powder
- 1 tsp fine sea salt
- ½ tsp ground black pepper
Pasta & Sauce
- 8 oz spaghetti (226 g)
- ½ cup salted butter
- 6 garlic cloves, minced
- ½ cup freshly grated Parmesan cheese (divided)
- 1 Tbsp fresh parsley, diced (optional for garnish)
Instructions
- Cook the Pasta
Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup pasta water, then drain. - Season & Cook the Chicken
In a bowl, mix olive oil, dried parsley, garlic powder, salt, and pepper. Slice chicken breasts into 4 thin filets. Coat well.
Heat a nonstick skillet over medium-high. Cook chicken 3 min per side until golden and internal temp reaches 165°F (74°C). Remove, cover with foil. - Make the Garlic Butter Sauce
Lower heat to medium-low. Melt butter in skillet, add minced garlic, and sauté 2 minutes (don’t burn!). Spoon half the sauce into a small bowl. - Combine Pasta & Sauce
Toss pasta in remaining sauce. Add ¼ cup Parmesan and ⅓ cup pasta water. Adjust consistency with more water if needed. - Assemble & Serve
Slice chicken, place over pasta, drizzle with reserved garlic butter. Top with remaining Parmesan, parsley, and a pinch of pepper. Enjoy! 🍝🧄
