Description
A quick, comforting dinner ready in under 20 minutes with juicy chicken, perfectly cooked pasta, and a melt-in-your-mouth garlic butter sauce.
Ingredients
- 1 lb boneless skinless chicken breasts (about 2 large)
- 2 Tbsp olive oil
- 1 ½ tsp dried parsley flakes
- 1 ½ tsp garlic powder
- 1 tsp fine sea salt
- ½ tsp ground black pepper
- 8 oz spaghetti (226 g)
- ½ cup salted butter
- 6 garlic cloves, minced
- ½ cup freshly grated Parmesan cheese (divided)
- 1 Tbsp fresh parsley, diced (optional for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup pasta water, then drain.
- In a bowl, mix olive oil, dried parsley, garlic powder, salt, and pepper. Slice chicken breasts into 4 thin filets and coat well. Heat a nonstick skillet over medium-high and cook chicken for 3 minutes per side until golden and internal temperature reaches 165°F (74°C). Remove and cover with foil.
- Lower heat to medium-low. Melt butter in skillet, add minced garlic, and sauté for 2 minutes (be careful not to burn). Spoon half the sauce into a small bowl.
- Toss the drained pasta in the remaining sauce. Add ¼ cup Parmesan and ⅓ cup pasta water, adjusting the consistency with more water if needed.
- Slice the chicken and place it over the pasta. Drizzle with reserved garlic butter, top with remaining Parmesan, parsley, and a pinch of pepper. Enjoy!
Notes
For a kick, add crushed red pepper flakes while sautéing garlic. You can swap chicken for shrimp, pancetta, or crispy bacon. This recipe works with fettuccine, linguine, or penne.
