Garlic Chicken Pasta

Description

A quick, comforting dinner ready in under 20 minutes with juicy chicken, perfectly cooked pasta, and a melt-in-your-mouth garlic butter sauce.


Ingredients

  • 1 lb boneless skinless chicken breasts (about 2 large)
  • 2 Tbsp olive oil
  • 1 ½ tsp dried parsley flakes
  • 1 ½ tsp garlic powder
  • 1 tsp fine sea salt
  • ½ tsp ground black pepper
  • 8 oz spaghetti (226 g)
  • ½ cup salted butter
  • 6 garlic cloves, minced
  • ½ cup freshly grated Parmesan cheese (divided)
  • 1 Tbsp fresh parsley, diced (optional for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup pasta water, then drain.
  2. In a bowl, mix olive oil, dried parsley, garlic powder, salt, and pepper. Slice chicken breasts into 4 thin filets and coat well. Heat a nonstick skillet over medium-high and cook chicken for 3 minutes per side until golden and internal temperature reaches 165°F (74°C). Remove and cover with foil.
  3. Lower heat to medium-low. Melt butter in skillet, add minced garlic, and sauté for 2 minutes (be careful not to burn). Spoon half the sauce into a small bowl.
  4. Toss the drained pasta in the remaining sauce. Add ¼ cup Parmesan and ⅓ cup pasta water, adjusting the consistency with more water if needed.
  5. Slice the chicken and place it over the pasta. Drizzle with reserved garlic butter, top with remaining Parmesan, parsley, and a pinch of pepper. Enjoy!

Notes

For a kick, add crushed red pepper flakes while sautéing garlic. You can swap chicken for shrimp, pancetta, or crispy bacon. This recipe works with fettuccine, linguine, or penne.
