  • 4 cups (600g) chopped cooked potatoes (waxy or all-purpose)
  • 2 oz (60g) ham, cubed (or crispy bacon)
  • 1 cup shredded cheese (sharp cheddar & Gruyere recommended)

To Serve:

  • Sour cream
  • Fresh chives or scallions

Instructions

  1. Whisk the Eggs – In a medium bowl, whisk together eggs, cream, Old Bay seasoning, salt, and pepper. Set aside.
  2. Cook the Potatoes – Heat oil in a large frying pan over medium-high heat. Add potatoes and cook until golden and crispy on all sides.
  3. Add Ham – Stir in the ham and let it warm through for 1–2 minutes.
