Description
Turn leftover potatoes into a golden, cheesy, hearty meal perfect for breakfast, brunch, or dinner. This skillet scramble is loaded with tender potatoes, savory ham, and gooey cheese.
Ingredients
- 4 large eggs
- 1.5 tbsp heavy cream or milk
- 1 ½ tsp Old Bay seasoning (or Cajun/Fajita seasoning)
- Salt & pepper to taste
- 1.5 tbsp frying oil or clarified butter
- 4 cups (600g) chopped cooked potatoes (waxy or all-purpose)
- 2 oz (60g) ham, cubed (or crispy bacon)
- 1 cup shredded cheese (sharp cheddar & Gruyere recommended)
Instructions
- In a medium bowl, whisk together eggs, cream, Old Bay seasoning, salt, and pepper. Set aside.
- Heat oil in a large frying pan over medium-high heat. Add potatoes and cook until golden and crispy on all sides.
- Stir in the ham and let it warm through for 1–2 minutes.
- Pour in the egg mixture and cook over low heat until eggs are just starting to set.
- Sprinkle shredded cheese evenly over the top. Cover the pan and cook until the cheese is fully melted and the eggs are cooked through.
- Spoon onto plates, add a dollop of sour cream, sprinkle with chives, and enjoy!
Notes
Swap ham for crispy bacon or turkey for a different twist. Add veggies like mushrooms or bell peppers for extra flavor. For extra creaminess, use half & half instead of milk.
