Description

Turn leftover potatoes into a golden, cheesy, hearty meal perfect for breakfast, brunch, or dinner. This skillet scramble is loaded with tender potatoes, savory ham, and gooey cheese.


Ingredients

  • 4 large eggs
  • 1.5 tbsp heavy cream or milk
  • 1 ½ tsp Old Bay seasoning (or Cajun/Fajita seasoning)
  • Salt & pepper to taste
  • 1.5 tbsp frying oil or clarified butter
  • 4 cups (600g) chopped cooked potatoes (waxy or all-purpose)
  • 2 oz (60g) ham, cubed (or crispy bacon)
  • 1 cup shredded cheese (sharp cheddar & Gruyere recommended)


Instructions

  1. In a medium bowl, whisk together eggs, cream, Old Bay seasoning, salt, and pepper. Set aside.
  2. Heat oil in a large frying pan over medium-high heat. Add potatoes and cook until golden and crispy on all sides.
  3. Stir in the ham and let it warm through for 1–2 minutes.
  4. Pour in the egg mixture and cook over low heat until eggs are just starting to set.
  5. Sprinkle shredded cheese evenly over the top. Cover the pan and cook until the cheese is fully melted and the eggs are cooked through.
  6. Spoon onto plates, add a dollop of sour cream, sprinkle with chives, and enjoy!

Notes

Swap ham for crispy bacon or turkey for a different twist. Add veggies like mushrooms or bell peppers for extra flavor. For extra creaminess, use half & half instead of milk.
