Description

These baked sweet potato slices are simple, versatile, and packed with flavor, perfect as a cozy weeknight side or for special occasions.


Ingredients

  • 2 large sweet potatoes, sliced into rounds
  • 2 tbsp extra virgin olive oil (or avocado oil)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional for savory option)
  • 1 tsp Italian seasoning (optional for savory option)
  • 1 tsp fresh thyme leaves (optional for savory option)
  • 1 tbsp maple syrup (optional for sweet option)
  • ½ tsp cinnamon (optional for sweet option)


Instructions

  1. Preheat oven to 425°F (218°C). Line a large baking sheet with parchment paper and lightly coat with cooking spray.
  2. Wash sweet potatoes well (peeling optional). Slice widthwise into even rounds (thin for crispier edges, thicker for a softer texture).
  3. Place slices in a large bowl or pile on the sheet. Drizzle with olive oil, sprinkle salt and pepper, then toss to coat evenly.
  4. Spread slices in a single layer on the baking sheet. Bake for 30-40 minutes, flipping halfway through, until golden brown.
  5. For a savory kick: sprinkle with garlic powder, thyme, and Italian seasoning before baking.
  6. For a sweet touch: drizzle with maple syrup and dust with cinnamon before roasting.

Notes
