Ingredients
- 2 large sweet potatoes, sliced into rounds
- 2 tbsp extra virgin olive oil (or avocado oil)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder (optional for savory option)
- 1 tsp Italian seasoning (optional for savory option)
- 1 tsp fresh thyme leaves (optional for savory option)
- 1 tbsp maple syrup (optional for sweet option)
- ½ tsp cinnamon (optional for sweet option)
Instructions
- Preheat oven to 425°F (218°C). Line a large baking sheet with parchment paper and lightly coat with cooking spray.
- Wash sweet potatoes well (peeling optional). Slice widthwise into even rounds (thin for crispier edges, thicker for a softer texture).
- Place slices in a large bowl or pile on the sheet. Drizzle with olive oil, sprinkle salt and pepper, then toss to coat evenly.
- Spread slices in a single layer on the baking sheet. Bake for 30-40 minutes, flipping halfway through, until golden brown.
- For a savory kick: sprinkle with garlic powder, thyme, and Italian seasoning before baking.
- For a sweet touch: drizzle with maple syrup and dust with cinnamon before roasting.

Bake in a single layer so the slices crisp evenly. Flip halfway through for a golden finish on both sides. Store leftovers in an airtight container in the fridge for up to 3-4 days.
