A simple yet delightful dessert that combines crushed pineapple, brown sugar, and yellow cake mix to create a comforting treat perfect for any occasion.
Ingredients
- 5 tablespoons butter (melted)
- 3/4 cup light brown sugar (packed)
- 1/4 cup chopped pecans (optional)
- 10-ounce jar maraschino cherries (about 30) (drained)
- 2 (20-ounce) cans crushed pineapple (well drained)
- 15.25-ounce box yellow cake mix
- 3/4 cup butter (melted)
Instructions
- Preheat your oven to 350°F (175°C).
- Pour the melted 5 tablespoons of butter into a 9×13-inch baking dish.
- Sprinkle brown sugar evenly over the butter.
- Arrange drained maraschino cherries and crushed pineapple over the brown sugar mixture.
- If using, scatter chopped pecans on top.
- Evenly sprinkle the yellow cake mix over the pineapple layer.
- Drizzle the remaining 3/4 cup melted butter over the cake mix.
- Bake for 45–50 minutes, until the cake is golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before flipping it over onto a serving plate.
Notes
Make sure to drain the pineapple thoroughly to avoid a soggy cake. For extra flavor, consider adding a splash of rum or vanilla extract to the melted butter.
