A simple yet delightful dessert that combines crushed pineapple, brown sugar, and yellow cake mix to create a comforting treat perfect for any occasion.


Ingredients

  • 5 tablespoons butter (melted)
  • 3/4 cup light brown sugar (packed)
  • 1/4 cup chopped pecans (optional)
  • 10-ounce jar maraschino cherries (about 30) (drained)
  • 2 (20-ounce) cans crushed pineapple (well drained)
  • 15.25-ounce box yellow cake mix
  • 3/4 cup butter (melted)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted 5 tablespoons of butter into a 9×13-inch baking dish.
  3. Sprinkle brown sugar evenly over the butter.
  4. Arrange drained maraschino cherries and crushed pineapple over the brown sugar mixture.
  5. If using, scatter chopped pecans on top.
  6. Evenly sprinkle the yellow cake mix over the pineapple layer.
  7. Drizzle the remaining 3/4 cup melted butter over the cake mix.
  8. Bake for 45–50 minutes, until the cake is golden brown and a toothpick inserted comes out clean.
  9. Allow to cool slightly before flipping it over onto a serving plate.

Notes

Make sure to drain the pineapple thoroughly to avoid a soggy cake. For extra flavor, consider adding a splash of rum or vanilla extract to the melted butter.
