Fall in love with every bite of this rich and creamy pasta dish! Tender penne pasta hugs a velvety parmesan and sun-dried tomato sauce, with juicy chicken in every forkful.
Ingredients
- 1 ½ lbs boneless, skinless chicken breasts (cut into 1-inch pieces)
- 10 oz penne pasta
- ½ tsp salt
- ¼ tsp pepper
- 1 tbsp olive oil
- 3 tbsp butter
- 2 tsp garlic, minced
- 3 tbsp flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 1 cup sun-dried tomatoes, drained
- 1 tsp paprika
- 2 tsp Italian seasoning
- Fresh basil, chopped (for garnish)
Instructions
- Boil penne according to package instructions. Drain and set aside.
- Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 6–8 minutes until fully cooked. Transfer to a plate.
- In the same skillet, melt butter. Sauté garlic for 30 seconds, then stir in flour to make a paste. Gradually whisk in chicken broth, heavy cream, and parmesan until smooth.
- Stir in sun-dried tomatoes, paprika, and Italian seasoning. Simmer 3–4 minutes to thicken.
- Return chicken and pasta to the skillet, tossing to coat evenly in sauce.
- Top with fresh basil and extra parmesan. Serve immediately and enjoy!
Notes
Extra Kick: Add a pinch of red pepper flakes for heat. Use freshly grated parmesan for best melting and flavor. Keeps 4 days in the fridge — add a splash of cream when reheating.
