Description

Fall in love with every bite of this rich and creamy pasta dish! Tender penne pasta hugs a velvety parmesan and sun-dried tomato sauce, with juicy chicken in every forkful.

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 10 oz penne pasta
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 2 tsp garlic, minced
  • 3 tbsp flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup sun-dried tomatoes, drained
  • 1 tsp paprika
  • 2 tsp Italian seasoning
  • Fresh basil, chopped (for garnish)

Instructions

  1. Boil penne according to package instructions. Drain and set aside.
  2. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 6–8 minutes until fully cooked. Transfer to a plate.
  3. In the same skillet, melt butter. Sauté garlic for 30 seconds, then stir in flour to make a paste. Gradually whisk in chicken broth, heavy cream, and parmesan until smooth.
  4. Stir in sun-dried tomatoes, paprika, and Italian seasoning. Simmer 3–4 minutes to thicken.
  5. Return chicken and pasta to the skillet, tossing to coat evenly in sauce.
  6. Top with fresh basil and extra parmesan. Serve immediately and enjoy!

Notes

Extra Kick: Add a pinch of red pepper flakes for heat. Use freshly grated parmesan for best melting and flavor. Keeps 4 days in the fridge — add a splash of cream when reheating.
