Ingredients
- 2 pounds carrots, peeled
- 1½ tbsp olive oil
- 3 tbsp honey
- 1 tsp freshly grated ginger (optional)
- ½ tsp salt
- ½ tsp pepper
- ½ tsp fresh rosemary, minced
- Fresh thyme to garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, honey, ginger, salt, pepper, and rosemary.
- Spread on baking sheet in a single layer.
- Roast for 20–25 minutes until tender and caramelized.
- Drizzle extra honey and garnish with thyme.
