Description
A delightful peach loaf made with fresh peaches and spices, perfect for breakfast or a snack.
Ingredients
- 3 cups fresh peaches, diced
- ¼ cup peach schnapps or peach nectar
- 1 tsp vanilla extract
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 eggs
- 2 ¾ cups all-purpose flour
- 1 ½ tsp baking powder
- 1 tsp salt
- ½ tsp baking soda
- 1 ½ tsp cinnamon
Instructions
- In a small saucepan, simmer diced peaches with peach schnapps (or nectar) for 5–8 minutes, until tender. Remove from heat, stir in vanilla, and let cool slightly.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, mixing well after each addition.
- In another bowl, whisk flour, baking powder, salt, baking soda, and cinnamon.
- Add dry ingredients to the butter mixture, alternating with the peach mixture. Stir just until combined—do not overmix.
- Pour the batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread rest in the pan for 10 minutes, then remove to a wire rack to cool completely.
Notes
Substitute nectar for schnapps for a family-friendly version. Add chopped pecans or white chocolate chips for extra texture. Store at room temperature for up to 3 days or freeze slices for quick breakfasts.
