  • 3 cups fresh peaches, diced
  • ¼ cup peach schnapps or peach nectar
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar

  • 2 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda

Instructions

  1. Cook the peaches: In a small saucepan, simmer diced peaches with peach schnapps (or nectar) for 5–8 minutes, until tender. Remove from heat, stir in vanilla, and let cool slightly.
  2. Prepare the batter: In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, mixing well after each addition.

  4. Mix wet and dry: Add dry ingredients to the butter mixture, alternating with the peach mixture. Stir just until combined—do not overmix.
  5. Bake: Pour the batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Let the bread rest in the pan for 10 minutes, then remove to a wire rack to cool completely.
