Warm, golden, and lightly caramelized, these honey roasted sweet potatoes are a cozy side dish perfect for any holiday table.
Ingredients
- 3 extra large sweet potatoes, washed and sliced into wedges
- 2 tablespoons raw honey
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt, divided
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh dill
- 3 tablespoons tahini (sesame paste)
- 2 tablespoons raw honey
- Juice of 1 lemon
- ¼ teaspoon salt
- 3 tablespoons water
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Slice the potatoes into wedges and place them in a large mixing bowl.
- Mix the glaze: whisk honey and olive oil together in a small bowl. Pour over potatoes, add herbs, and toss until coated.
- Arrange on sheet pan: spread wedges evenly in a single layer. Sprinkle with ¼ teaspoon sea salt.
- Bake: roast for 20 minutes, flip, then bake another 15–20 minutes until golden and tender.
- Caramelize: move to top rack and broil for 2–3 minutes until edges are slightly crisp.
- Finish: transfer to a serving bowl, sprinkle with remaining salt and herbs.
- Make the tahini drizzle: blend tahini, honey, lemon, salt, and water until smooth. Drizzle over potatoes or serve as a dip.
Notes
Prep ahead: Cut the sweet potatoes in advance and refrigerate until ready to roast. You can use maple syrup instead of honey for a fully vegan option.
