Ingredients
- 150 g butter
- 200 g granulated sugar
- 50 g dark brown sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 260 g all-purpose flour
- 40 g cocoa powder
- ¾ teaspoon baking powder
- ¾ teaspoon baking soda
- ¾ teaspoon salt
- 80 g powdered sugar
- 50 g butter, room temperature
- ½ teaspoon vanilla extract
- 1 ½ teaspoon milk
- Candy eyes for decorating
Instructions
- Melt butter gently in a microwave or saucepan, then let cool to room temperature. Whisk together melted butter, granulated sugar, and brown sugar. Add egg, egg yolk, and vanilla extract, mixing until combined.
- In a separate bowl, mix together flour, cocoa powder, baking powder, baking soda, and salt. Fold dry ingredients into the wet mixture until just combined. Chill dough in the fridge for 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop dough into 2 oz balls (about ¼ cup), roll gently, and flatten slightly. Place 6 cookies per sheet and bake for 9–10 minutes. Let cool for 3 minutes on the tray, then transfer to a rack.
- Beat together powdered sugar, butter, vanilla extract, and milk until smooth and fluffy. Fill a piping bag with buttercream and cut a small tip. Pipe lines across cooled cookies to create “mummy bandages.” Attach candy eyes with a dab of buttercream. Allow to set before serving.
Notes
Chill the dough for easier handling and thicker cookies. Use a kitchen scale for precise measurements and consistent results. Play with designs by criss-crossing the frosting at different angles.
