Description
This baked cheesy rice is comfort in a dish. Buttery, fluffy, and packed with flavor, it’s the side you’ll want with everything.
Ingredients
- 1 ½ cups dry jasmine rice, rinsed
- 24 oz chicken stock (or vegetable stock for vegetarian)
- Salt & pepper, to taste
- 6 oz sharp white cheddar cheese, freshly grated
- 4 tbsp unsalted butter, thinly sliced
Instructions
- Preheat oven to 425°F (220°C) and lightly grease a 9×9-inch baking dish.
- Run cold water over the rice until it’s clear to remove excess starch.
- Place rice in the dish, pour in stock, season with salt and pepper, and sprinkle in cheese. Stir gently.
- Spread the butter slices evenly on top of the rice.
- Tightly cover the dish with foil and bake for 30 minutes.
- Remove foil and bake another 20–30 minutes, until rice is fluffy and the top is lightly golden.
- Fluff with a fork and serve hot with your favorite main dish.
Notes
Swap cheddar for Gruyère or mozzarella for a twist in flavor. For a complete meal, add cooked veggies or shredded chicken before baking. Leftovers? Store in an airtight container for up to 3 days, then reheat with a splash of stock.
