Description

These oven-roasted glazed carrots are tender, caramelised on the edges, and coated in a glossy brown sugar butter glaze, making them a perfect side dish for any occasion.


Ingredients

  • 1 kg / 2 lb carrots, peeled
  • 1/4 cup (40 g) brown sugar, loosely packed
  • 2 garlic cloves, minced
  • 2 tablespoons butter (30 g), melted
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat your oven to 220°C / 425°F (200°C / 400°F fan-forced).
  2. Line a large baking tray with parchment paper for easy cleanup, if desired.
  3. Peel the carrots and trim the ends. Slice on the diagonal into pieces about 4 cm / 1.75 inches long. Cut thicker ends in half lengthwise to ensure even cooking.
  4. In a large bowl, combine melted butter, olive oil, brown sugar, minced garlic, salt, and pepper. Whisk or stir until the sugar and seasonings dissolve into the mixture.
  5. Add the carrot pieces to the bowl and toss well until coated in the glaze.
  6. Spread the carrots in a single layer on the prepared baking tray.
  7. Roast for 15 minutes, then toss the carrots to expose new sides to the heat. Return to the oven and roast for another 10 minutes until tender and caramelised.
  8. Once out of the oven, toss the carrots in any remaining glaze on the tray. Transfer to a serving dish and garnish with chopped parsley if desired. Serve warm.

Notes

Use any type of carrots you have. For a lighter glaze, reduce the brown sugar. You can also substitute brown sugar with honey or maple syrup for a different flavor.
