Description
These oven-roasted glazed carrots are tender, caramelised on the edges, and coated in a glossy brown sugar butter glaze, making them a perfect side dish for any occasion.
Ingredients
- 1 kg / 2 lb carrots, peeled
- 1/4 cup (40 g) brown sugar, loosely packed
- 2 garlic cloves, minced
- 2 tablespoons butter (30 g), melted
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 220°C / 425°F (200°C / 400°F fan-forced).
- Line a large baking tray with parchment paper for easy cleanup, if desired.
- Peel the carrots and trim the ends. Slice on the diagonal into pieces about 4 cm / 1.75 inches long. Cut thicker ends in half lengthwise to ensure even cooking.
- In a large bowl, combine melted butter, olive oil, brown sugar, minced garlic, salt, and pepper. Whisk or stir until the sugar and seasonings dissolve into the mixture.
- Add the carrot pieces to the bowl and toss well until coated in the glaze.
- Spread the carrots in a single layer on the prepared baking tray.
- Roast for 15 minutes, then toss the carrots to expose new sides to the heat. Return to the oven and roast for another 10 minutes until tender and caramelised.
- Once out of the oven, toss the carrots in any remaining glaze on the tray. Transfer to a serving dish and garnish with chopped parsley if desired. Serve warm.
Notes
Use any type of carrots you have. For a lighter glaze, reduce the brown sugar. You can also substitute brown sugar with honey or maple syrup for a different flavor.
