Ingredients

  • 1 lb Yukon Gold potatoes, cut into bite-sized cubes
  • 1 lb sirloin steak, cut into bite-sized cubes
  • 2 tbsp olive oil (divided)
  • 2 tbsp garlic herb butter (or homemade garlic butter)
  • 1 tsp garlic powder (divided)
  • 1 tsp salt (divided)
  • 1 tsp black pepper (divided)


Instructions

  1. Heat 1 tbsp olive oil and 1 tbsp garlic herb butter in a large skillet over medium heat.
  2. Add the potatoes to the skillet, seasoning with ½ tsp garlic powder, ½ tsp salt, and ½ tsp pepper. Cook for 10-12 minutes, until golden brown and fork-tender. Set aside on a plate.
  3. Season the steak cubes with ½ tsp garlic powder, ½ tsp salt, and ½ tsp black pepper.
  4. Add the remaining 1 tbsp olive oil and 1 tbsp garlic herb butter to the skillet, increasing the heat to medium-high.
  5. Add the seasoned steak cubes and sear for 3-4 minutes per side, or until browned to desired doneness.
  6. Reduce heat to medium-low, add the cooked potatoes back into the skillet, and toss everything together in the garlic butter.
  7. Serve immediately, garnished with fresh herbs if desired.
