Description

Crispy, caramelized roasted sweet potatoes topped with a delicious maple-walnut glaze, perfect for holiday gatherings.


Ingredients

  • 3 medium sweet potatoes
  • ⅓ cup unsalted butter, melted
  • 1 ½ tsp cinnamon (divided)
  • ½ tsp salt
  • ½ tsp black pepper (or cayenne for spice)
  • ⅓ cup + 2 tbsp maple syrup
  • ⅓ cup chopped walnuts
  • 1 tsp fresh thyme


Instructions

  1. Wash and slice sweet potatoes into ½-inch rounds (peel if you prefer). Keep slices even for best results.
  2. Toss slices with melted butter, 1 tsp cinnamon, salt, and pepper until fully coated.
  3. Place in a single layer on a baking tray (do not overcrowd). Roast at 200°C / 400°F for 25–30 minutes, until fork-tender.
  4. Stir together maple syrup, walnuts, remaining ½ tsp cinnamon, and thyme in a bowl.
  5. Remove tray, spoon 1 tsp of glaze over each slice, then bake for 8–10 more minutes until edges caramelize.
  6. Sprinkle with feta cheese if desired for a sweet-salty finish.

Notes

Avoid covering with foil to prevent steaming. Store in an airtight container for up to 1 week, or freeze for 3 months.
