Ingredients
- 3 medium sweet potatoes
- ⅓ cup unsalted butter, melted
- 1 ½ tsp cinnamon (divided)
- ½ tsp salt
- ½ tsp black pepper (or cayenne for spice)
- ⅓ cup + 2 tbsp maple syrup
- ⅓ cup chopped walnuts

- Toss slices with melted butter, 1 tsp cinnamon, salt, and pepper until fully coated.
- Place in a single layer on a baking tray (do not overcrowd). Roast at 200°C / 400°F for 25–30 minutes, until fork-tender.
- Stir together maple syrup, walnuts, remaining ½ tsp cinnamon, and thyme in a bowl.
- Remove tray, spoon 1 tsp of glaze over each slice, then bake for 8–10 more minutes until edges caramelize.
- Sprinkle with feta cheese if desired for a sweet-salty finish.
Notes
