Description

Fluffy, gooey, and made with love — these homemade cinnamon rolls are a dream come true for beginners. No overnight rise needed, and the flavor is out of this world!


Ingredients

  • 2¾ cups (344g) all-purpose flour (plus more as needed)
  • ¼ cup (50g) granulated sugar
  • ½ tsp salt
  • ¾ cup (180ml) whole milk
  • 3 tbsp (43g) unsalted butter
  • 2¼ tsp instant yeast (1 packet)
  • 1 large egg (room temperature)
  • 3 tbsp (43g) softened butter (for filling)
  • ⅓ cup (67g) packed brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz (113g) full-fat cream cheese, softened (for icing)
  • 2 tbsp (28g) unsalted butter, softened (for icing)
  • ⅔ cup (80g) confectioners’ sugar
  • 1 tsp pure vanilla extract


Instructions

  1. Make the Dough: In a large bowl, whisk flour, sugar, and salt. In a separate bowl, warm the milk and butter until just warm to the touch (about 110°F). Whisk in the yeast until dissolved. Pour into dry ingredients, add the egg, and mix into a soft dough.
  2. Knead & Rest: Turn the dough onto a floured surface and knead for 3–5 minutes. Form a smooth ball, place in a greased bowl, cover, and let rest for 10 minutes.
  3. Prepare the Filling: Roll dough into a 14×8” rectangle. Spread with softened butter and sprinkle evenly with brown sugar + cinnamon.
  4. Shape the Rolls: Roll the dough tightly into a log and cut into 10–12 even pieces. Place rolls into a greased 9” or 10” baking pan.
  5. Let Them Rise: Cover and let the rolls rise for 60–90 minutes in a warm, draft-free space until doubled in size.
  6. Bake: Preheat oven to 375°F (190°C). Bake for 24–27 minutes until golden. Tent with foil if browning too fast. Let cool slightly.
  7. Make the Icing: Beat cream cheese and butter until smooth. Add sugar and vanilla, mix until creamy. Spread on warm rolls and serve!

Notes

Use a thermometer to avoid overheating milk (keep it ~110°F). For fluffiest rolls, don’t overdo the flour. Dough should be soft and tacky, not dry. Rolls can be frozen after shaping, par-baking, or baking — perfect for make-ahead brunch!
