Ingredients

For the Dough:

  • ¼ cup (50g) granulated sugar
  • ½ tsp salt
  • ¾ cup (180ml) whole milk
  • 3 tbsp (43g) unsalted butter
  • 2¼ tsp instant yeast (1 packet)
  • 1 large egg (room temperature)

For the Filling:

  • 3 tbsp (43g) softened butter
  • ⅓ cup (67g) packed brown sugar
  • 1 tbsp ground cinnamon

For the Cream Cheese Icing:

  • 4 oz (113g) full-fat cream cheese, softened
  • 2 tbsp (28g) unsalted butter, softened
  • ⅔ cup (80g) confectioners’ sugar
  • 1 tsp pure vanilla extract

Step-by-Step Instructions

  1. Make the Dough:
    In a large bowl, whisk flour, sugar, and salt. In a separate bowl, warm the milk and butter until just warm to the touch (about 110°F). Whisk in the yeast until dissolved. Pour into dry ingredients, add the egg, and mix into a soft dough.
  2. Knead & Rest:
    Turn the dough onto a floured surface and knead for 3–5 minutes. Form a smooth ball, place in a greased bowl, cover, and let rest for 10 minutes.
  3. Prepare the Filling:
    Roll dough into a 14×8″ rectangle. Spread with softened butter and sprinkle evenly with brown sugar + cinnamon.
  4. Shape the Rolls:
    Roll the dough tightly into a log and cut into 10–12 even pieces. Place rolls into a greased 9″ or 10″ baking pan.
  5. Let Them Rise:
    Cover and let the rolls rise for 60–90 minutes in a warm, draft-free space until doubled in size.
  6. Bake:
    Preheat oven to 375°F (190°C). Bake for 24–27 minutes until golden. Tent with foil if browning too fast. Let cool slightly.
  7. Make the Icing:
