Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 can refrigerated biscuit dough
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken, cooking until browned.
  3. Toss in the chopped onion, sliced carrots, and celery. Cook until the vegetables are softened.
  4. Pour in the chicken broth and bring everything to a gentle simmer.
  5. Mix in the heavy cream, garlic powder, thyme, salt, and pepper.
  6. Cut the biscuit dough into quarters and drop them into the simmering soup.
  7. Cover the pot and cook for about 10-15 minutes, until the dumplings are fluffy. Garnish with fresh parsley before serving.

Notes

For a lighter dish, use low-fat cream or a plant-based alternative. Rotisserie chicken can save time.
