Ingredients
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 can refrigerated biscuit dough
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced chicken, cooking until browned.
- Toss in the chopped onion, sliced carrots, and celery. Cook until the vegetables are softened.
- Pour in the chicken broth and bring everything to a gentle simmer.
- Mix in the heavy cream, garlic powder, thyme, salt, and pepper.
- Cut the biscuit dough into quarters and drop them into the simmering soup.
- Cover the pot and cook for about 10-15 minutes, until the dumplings are fluffy. Garnish with fresh parsley before serving.
Notes
For a lighter dish, use low-fat cream or a plant-based alternative. Rotisserie chicken can save time.
