A cozy crock pot creamy Cajun chicken pasta with juicy shredded chicken, tender penne, and a rich Cajun-spiced cream sauce.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 2 cups heavy whipping cream
- 4 cups chicken broth
- 4 tablespoons butter
- 2 tablespoons Cajun seasoning
- ½ teaspoon garlic powder
- 1 pound penne pasta, uncooked
- 1 cup grated Parmesan cheese (plus extra for serving, optional)
Instructions
- Place the chicken breasts in the bottom of a 6-quart crock pot.
- Pour in the heavy whipping cream and chicken broth.
- Add the butter, Cajun seasoning, and garlic powder, then stir gently.
- Cover and cook on Low for 4–6 hours or High for 2–3 hours until chicken is cooked through.
- Transfer cooked chicken to a cutting board and shred with two forks.
- Whisk the creamy liquid in the crock pot to combine.
- Return the shredded chicken to the slow cooker and add the uncooked penne pasta.
- Cover and cook on High for 20–30 minutes, stirring halfway through, until pasta is tender.
- Stir in grated Parmesan cheese and let sit for 5 minutes to thicken.
- Serve with extra Parmesan or chopped parsley if desired.
Notes
Adjust the heat level of Cajun seasoning to taste and store leftovers in the fridge for up to 4–5 days.
