Description

Golden roasted sweet potato rounds drizzled with honey and topped with salty feta cheese make a side dish that’s both festive and flavorful.


Ingredients

  • 3 sweet potatoes, scrubbed and sliced
  • 3 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp chili flakes (optional)
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • 2 tbsp honey (or hot honey for spice)
  • ½ cup feta cheese, crumbled
  • Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 425°F and line a sheet tray with parchment.
  2. Toss sweet potato rounds with olive oil, garlic powder, sea salt, black pepper, and chili flakes.
  3. Roast for 15–20 minutes per side, flipping once, until edges are crisp.
  4. Drizzle with honey, sprinkle on feta and parsley, and serve hot.

Notes

For extra crispiness, broil for 2–3 minutes at the end.
