Description

This creamy Marry Me Chicken Orzo combines tender chicken, sun-dried tomatoes, parmesan, and spinach in a rich sauce, all made in one pot in just 30 minutes.


Ingredients

  • 650 g (1.4 lb) skinless & boneless chicken breast, chopped
  • 1 tbsp olive oil (or oil from sun-dried tomatoes jar)
  • 3 garlic cloves, peeled & crushed
  • 170 g (6 oz) sun-dried tomatoes in oil, drained
  • 1 tsp dried oregano
  • 2 tsp paprika
  • 250 g (9 oz) orzo pasta
  • 650 ml (2.75 cups) hot chicken stock
  • 150 ml (0.75 cups) double cream (heavy cream)
  • 50 g (2 oz) parmesan cheese, grated
  • 120 g (4 oz) baby spinach
  • Freshly ground black pepper


Instructions

  1. Heat olive oil in a large, deep pan over medium heat. Add chicken and cook for 5 minutes until lightly golden.
  2. Stir in garlic, sun-dried tomatoes, oregano, and paprika. Cook for 3–5 minutes until garlic softens.
  3. Add orzo, stock, and pepper. Stir well, cover, and cook for 10 minutes, stirring occasionally.
  4. Reduce to low heat, add spinach and cream, stirring until spinach wilts and cream warms through.
  5. Remove from heat and stir in parmesan. Serve hot and enjoy the creamy goodness!

Notes

For extra juiciness, swap chicken breast with boneless thighs. If orzo absorbs too much liquid, add a splash of water or stock. For a vegetarian option, replace chicken with mushrooms and use vegetable stock.
