Description

Deliciously soft and chewy blondies with the rich flavors of cinnamon rolls, perfect for brunch or dessert.


Ingredients

  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 large egg yolk, at room temperature
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cinnamon
  • 1/2 cup white sugar
  • 1 tablespoon cream cheese
  • 1 tablespoon heavy cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Mix the melted butter and brown sugar in a bowl until well combined.
  3. Add the egg, egg yolk, and vanilla extract, mixing until smooth.
  4. In another bowl, whisk together the flour, baking powder, and salt, then gradually incorporate this dry mixture into the wet ingredients until just combined.
  5. Stir together the cinnamon and white sugar for your cinnamon sugar layer.
  6. Pour half of the blondie batter into the prepared pan, followed by half of the cinnamon sugar mix.
  7. Spread the remaining batter on top and sprinkle with the rest of the cinnamon sugar.
  8. Bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Prepare the icing by mixing cream cheese, heavy cream, powdered sugar, vanilla extract, and a pinch of salt until smooth.
  10. Drizzle the icing over the cooled blondies before cutting into squares and serving.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. These blondies also freeze well for extended storage.
