Description
Deliciously soft and chewy blondies with the rich flavors of cinnamon rolls, perfect for brunch or dessert.
Ingredients
- 1/2 cup unsalted butter, melted and cooled slightly
- 1 cup packed light brown sugar
- 1 large egg
- 1 large egg yolk, at room temperature
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons cinnamon
- 1/2 cup white sugar
- 1 tablespoon cream cheese
- 1 tablespoon heavy cream
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- Mix the melted butter and brown sugar in a bowl until well combined.
- Add the egg, egg yolk, and vanilla extract, mixing until smooth.
- In another bowl, whisk together the flour, baking powder, and salt, then gradually incorporate this dry mixture into the wet ingredients until just combined.
- Stir together the cinnamon and white sugar for your cinnamon sugar layer.
- Pour half of the blondie batter into the prepared pan, followed by half of the cinnamon sugar mix.
- Spread the remaining batter on top and sprinkle with the rest of the cinnamon sugar.
- Bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Prepare the icing by mixing cream cheese, heavy cream, powdered sugar, vanilla extract, and a pinch of salt until smooth.
- Drizzle the icing over the cooled blondies before cutting into squares and serving.
Notes
Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. These blondies also freeze well for extended storage.
