Cheesy Beef Noodle Casserole

Description

A cozy and hearty beef noodle casserole with tender egg noodles, rich tomato sauce, and melty cheddar cheese.


Ingredients

  • 12 oz egg noodles
  • 2 tbsp olive oil
  • 1.5 lbs ground beef
  • 1 small onion, minced
  • 3 cloves garlic, chopped
  • 2 ½ cups tomato sauce
  • 1 (15 oz) can diced tomatoes, drained
  • 2 cups cheddar cheese, shredded
  • Salt & pepper, to taste
  • 2 tbsp garlic powder (divided)
  • 12 tbsp Italian seasoning
  • Cooking spray
  • Dried parsley, for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×13” baking dish with cooking spray.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic for 2 minutes, then add ground beef. Season with salt, pepper, and half the garlic powder. Cook until browned, breaking up the meat, and drain excess fat if needed.
  3. Add diced tomatoes and tomato sauce to the beef. Season with remaining garlic powder, Italian seasoning, salt, and pepper. Stir and let simmer for 5 minutes.
  4. Cook egg noodles according to package directions, then drain. Add noodles to the beef mixture and toss until evenly coated.
  5. Transfer mixture to the prepared baking dish. Top with shredded cheddar. Bake uncovered for 20–30 minutes, or until the cheese is melted and bubbly.
  6. Let cool slightly, garnish with parsley, and serve warm.

Notes

Swap beef for ground turkey or chicken for a lighter version. Stir extra cheese into the noodles for maximum cheesiness. Use penne or bow-tie pasta if you don’t have egg noodles.
