Description

Soft and fudgy brownie cookies that combine the best elements of brownies and cookies.


Ingredients

  • 1 cup salted butter, melted
  • 2 cups granulated sugar
  • 1/4 cup vegetable oil
  • 1 cup unsweetened cocoa powder
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips (plus extra for topping)
  • Flake sea salt for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, mix the melted butter, granulated sugar, and vegetable oil until smooth.
  3. Stir in the cocoa powder and vanilla extract until well combined.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated.
  5. Gradually add the all-purpose flour and baking powder. Mix until you achieve a smooth dough, then fold in the chocolate chips.
  6. Use a cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, until the edges are firm but the centers remain soft.
  8. While the cookies are still warm, sprinkle with flake sea salt, then transfer to a wire rack to cool.

Notes

These cookies can be served warm or cooled to room temperature. Store in an airtight container for up to a week or freeze for up to three months.
