Soft and fudgy brownie cookies that combine the best elements of brownies and cookies.
Ingredients
- 1 cup salted butter, melted
- 2 cups granulated sugar
- 1/4 cup vegetable oil
- 1 cup unsweetened cocoa powder
- 1 tablespoon vanilla extract
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup chocolate chips (plus extra for topping)
- Flake sea salt for garnish
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
- In a large bowl, mix the melted butter, granulated sugar, and vegetable oil until smooth.
- Stir in the cocoa powder and vanilla extract until well combined.
- Beat in the eggs one at a time, ensuring each is fully incorporated.
- Gradually add the all-purpose flour and baking powder. Mix until you achieve a smooth dough, then fold in the chocolate chips.
- Use a cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until the edges are firm but the centers remain soft.
- While the cookies are still warm, sprinkle with flake sea salt, then transfer to a wire rack to cool.
Notes
These cookies can be served warm or cooled to room temperature. Store in an airtight container for up to a week or freeze for up to three months.
