Start your morning with this wholesome and high-protein breakfast bake made with creamy cottage cheese, heart-healthy oats, and juicy blueberries, naturally sweetened with maple syrup and spiced with cinnamon.
Ingredients
- 4 large eggs
- 2 cups full-fat cottage cheese
- ¼ cup pure maple syrup
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- ½ cup large flaked oats
- 1 ½ cups fresh blueberries (divided)
Instructions
- Prep the Pan & Oven: Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or cooking spray.
- Blend Wet Ingredients: In a blender, combine eggs, cottage cheese, maple syrup, cinnamon, and vanilla. Blend until smooth.
- Add Oats & Blueberries: Pour batter into the baking dish. Stir in oats, then scatter 1 cup of blueberries on top.
- Bake in Stages: Bake for 30 minutes. Add the remaining ½ cup blueberries on top and continue baking for 10 minutes, until golden and set in the center.
- Serve & Enjoy: Let cool slightly. Dust with cinnamon and serve warm with Greek yogurt, maple syrup, or honey.
Notes
Full Fat = Better Texture: Avoid low-fat cottage cheese to prevent a watery, rubbery bake. If using frozen blueberries, add them straight from the freezer to prevent color bleeding. Freeze individual slices for up to 2 months for a grab-and-go breakfast.
