Description
Delicious and quick garlic butter chicken skewers finished with Parmesan, perfect for outdoor cooking.
Ingredients
- 4 boneless chicken breasts, cubed
- 15 medium-sized skewers
- 1 tbsp oil
- 1 tsp grated garlic
- 1 tsp garlic salt
- 1 tsp paprika
- 1 tsp oregano
- 2 tsp Italian seasoning
- 1.5 tsp Blackstone Bayou Blend
- 2 tbsp Parmesan cheese
- 1/4 cup Duke’s mayo
- 1 stick unsalted butter, melted
- 2 tbsp fresh grated garlic
- 1/2 tsp garlic salt
- 1.5 tbsp flat-leaf parsley, chopped
- 2 tbsp Parmesan cheese
- Pinch of crushed red pepper
Instructions
- Cube chicken, add all marinade ingredients, and marinate for at least 20 minutes (or up to overnight).
- Thread chicken onto skewers.
- Preheat Blackstone to medium to medium-high and add a thin layer of oil.
- Cook skewers 2–3 minutes per side on all four sides, turning to brown evenly.
- Mix garlic butter ingredients in a small bowl while the chicken cooks.
- During the last couple of minutes, brush skewers with garlic butter on both sides, then plate and garnish with more Parmesan if desired.
Notes
Serve while the garlic butter is still glossy, and garnish with extra Parmesan for added flavor.
