Ingredients
- 1 pound boneless, skinless chicken breast
- 1/2 cup barbecue sauce, plus extra for basting
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 1 bell pepper (red or green)
- 1 red onion
- 1 zucchini
- Wooden or metal skewers
Instructions
- Prepare the chicken: Cut the chicken breasts into 1-inch cubes and place them in a bowl. In a separate bowl, mix barbecue sauce, olive oil, garlic powder, salt, and pepper. Pour this mixture over the chicken, stirring until well coated. Let it marinate for at least 30 minutes.
- Prepare vegetables: Chop the bell pepper, onion, and zucchini into bite-sized pieces.
- Assemble the kebabs: Thread the marinated chicken and the vegetables onto the skewers, alternating between chicken and veggies.
- Preheat the grill: Heat your grill to medium-high. Lightly oil the grates to prevent sticking.
- Grill the kebabs: Place the skewers on the grill. Grill for about 10-12 minutes, turning occasionally and basting with remaining barbecue sauce until the chicken reaches an internal temperature of 165°F (75°C).
- Serve: Remove from the grill and let rest for a few minutes before serving.
Notes
For optimal flavor, marinate chicken overnight. Use soaked wooden skewers to prevent burning.
