Description

Juicy chicken glazed with smoky barbecue sauce, skewered and grilled to perfection. A delightful dish perfect for gatherings and family meals.


Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1/2 cup barbecue sauce, plus extra for basting
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 1 bell pepper (red or green)
  • 1 red onion
  • 1 zucchini
  • Wooden or metal skewers


Instructions

  1. Prepare the chicken: Cut the chicken breasts into 1-inch cubes and place them in a bowl. In a separate bowl, mix barbecue sauce, olive oil, garlic powder, salt, and pepper. Pour this mixture over the chicken, stirring until well coated. Let it marinate for at least 30 minutes.
  2. Prepare vegetables: Chop the bell pepper, onion, and zucchini into bite-sized pieces.
  3. Assemble the kebabs: Thread the marinated chicken and the vegetables onto the skewers, alternating between chicken and veggies.
  4. Preheat the grill: Heat your grill to medium-high. Lightly oil the grates to prevent sticking.
  5. Grill the kebabs: Place the skewers on the grill. Grill for about 10-12 minutes, turning occasionally and basting with remaining barbecue sauce until the chicken reaches an internal temperature of 165°F (75°C).
  6. Serve: Remove from the grill and let rest for a few minutes before serving.

Notes

For optimal flavor, marinate chicken overnight. Use soaked wooden skewers to prevent burning.
