Description

Moist, cinnamon-spiced apple quick bread featuring soft chunks of apple in every slice. Simple to mix with no mixer needed, perfect when warm with a little butter.


Ingredients

  • ¾ cup white sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1½ teaspoons ground cinnamon (or more to taste)
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 cups apples, peeled and chopped into ¼-inch cubes


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the sugar, eggs, vegetable oil, and vanilla extract until smooth and well combined.
  3. In a separate bowl, whisk together the flour, cinnamon, salt, baking powder, and baking soda.
  4. Add the dry mixture to the wet ingredients and stir just until combined.
  5. Gently fold in the chopped apples until evenly distributed.
  6. Spoon the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45 minutes, then cover loosely with foil and continue baking for about 15 minutes more, or until a toothpick inserted in the center comes out clean.
  8. Cool briefly in the pan, then transfer to a wire rack to cool completely before slicing.

Notes

Apple choices: Braeburn, Granny Smith, Golden Delicious, or Honeycrisp are all great for baking. For a less sweet loaf, reduce the sugar; options for texture tweaks include using shredded apple or adding nuts, raisins, or swapping part of the sugar for brown sugar.
