Debbie’s Amazing Apple Bread

Moist, cinnamon-spiced apple quick bread with soft chunks of apple in every slice. Simple to mix, no mixer needed, and perfect warm with a little butter.

Ingredients

  • ¾ cup white sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1½ teaspoons ground cinnamon (or more to taste)
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 cups apples, peeled and chopped into ¼-inch cubes
    • (Braeburn, Granny Smith, Golden Delicious, Honeycrisp, etc.)

Instructions

  1. Prep the pan & oven
    • Preheat oven to 350°F (175°C).
    • Grease a 9×5-inch loaf pan (you can also line with parchment for easy removal).
  2. Mix the wet ingredients
    • In a large bowl, whisk together:
      • Sugar
      • Eggs
      • Vegetable oil
      • Vanilla extract
    • Whisk until smooth and well combined.
  3. Add dry ingredients
    • In a separate bowl, whisk together:
      • Flour
      • Cinnamon
      • Salt
      • Baking powder
      • Baking soda
    • Add this dry mixture to the wet ingredients and stir just until combined (don’t overmix).
  4. Fold in the apples
    • Gently stir in the chopped apples until evenly distributed.
    • The batter will be thick and packed with fruit.
  5. Bake
    • Spoon the batter into the prepared loaf pan and smooth the top.
    • Bake for 45 minutes.
    • Loosely cover the pan with foil, then continue baking about 15 minutes more, or until a toothpick inserted in the center comes out clean.
  6. Cool & serve
    • Cool briefly in the pan, then transfer the loaf to a wire rack to cool completely.
    • Slice and enjoy warm or at room temperature (amazing with butter).

    Braeburn, Granny Smith, Golden Delicious, or Honeycrisp are all great baking apples.
  • Sweeter / less sweet:
    • For a less sweet loaf, you can safely reduce the sugar (many bakers like 1 cup in the original version; this updated one is already reduced to ¾ cup).
  • Texture tweaks:
    • Use shredded apple instead of chunks for a tighter, moister crumb.
  • Add-ins:
    • Chopped nuts (walnuts or pecans)
    • Raisins or dried cranberries
    • Swap part of the white sugar for brown sugar for a light caramel note
