2 lbs turkey ribs

2 tsp garlic powder

2 tsp smoked paprika

1 tbsp brown sugar

1/2 tsp cayenne pepper

1 tsp thyme or rosemary (dried)

1 tbsp olive oil or mustard (as a binding agent)

1/2 cup BBQ sauce (optional, for glazing)

Instructions
 

Preparation:

  • Trim and clean turkey ribs: Remove the silver membrane and excess fat.
  • Pat ribs dry and apply olive oil or mustard to bind the dry rub.
  • Mix the dry rub ingredients (garlic powder, paprika, brown sugar, cayenne, and herbs). Rub generously onto the ribs.

Cooking Method Options:

    a. Smoking:

    • Preheat the smoker to 225°F.
    • Add wood chips (hickory or apple) for flavor.
    • Smoke for 3 hours. Wrap in foil with a splash of broth or juice and smoke for 2 more hours. Unwrap and glaze with BBQ sauce for the final hour.

    b. Grilling:

    • Preheat the grill to medium-high.
    • Sear ribs for 5-7 minutes per side. Move to indirect heat, cover, and cook for 1-2 hours, brushing with BBQ sauce in the last 30 minutes.

    c. Baking:

    • Preheat the oven to 250°F.
    • Place ribs in a covered dish with a splash of broth. Bake for 3-4 hours until tender. Glaze with BBQ sauce and broil for the last 10 minutes.

    Resting and Serving:

    • Let the turkey ribs rest for 10-15 minutes before serving. This ensures the juices redistribute evenly.
    • Garnish with fresh herbs and serve with coleslaw, baked beans, or cornbread.

    • Use a digital thermometer to ensure the internal temperature reaches 165°F for safety.
