Ingredients
  

For the Turkey Ribs:

  • 4 lbs turkey ribs
  • 1 cup apple cider for marinade
  • 3 tablespoons soy sauce
  • 2 garlic cloves minced

For the Dry Rub:

  • ¼ cup packed light brown sugar
  • ¼ cup kosher salt
  • 2 tablespoons smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ground black pepper
  • 1 tablespoon ground mustard
  • 2 teaspoons dried thyme
  • 1 teaspoon ground cumin
  • ½ teaspoon cayenne pepper

For the Glaze (Optional):

  • ½ cup ketchup
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika

Instructions
 

Prepare the Turkey Ribs:

  • Rinse and pat dry the turkey ribs. Remove the membrane for better seasoning.
  • Marinate in a mixture of apple cider, soy sauce, and garlic for 2-4 hours.

Prepare the Rub:

  • Mix all dry rub ingredients in a bowl.
  • Pat the ribs dry, loosen the skin, and coat generously with the rub.
  • Refrigerate for 2 hours or overnight for best flavor.

Set Up the Smoker:

  • Preheat your smoker to 225°F using your preferred wood chips (e.g., apple or hickory).
  • Place the ribs on a rib rack inside the smoker.

Smoking Process:

  • Smoke the ribs at 225°F for 2-3 hours. Maintain consistent temperature and spritz with apple cider every 30-45 minutes.
  • Check the internal temperature; it should reach 165°F.

Glaze (Optional):

  • During the last 30 minutes, apply the glaze every 10 minutes for a caramelized finish.

Rest and Serve:

  • Remove the ribs from the smoker and let them rest for 20-30 minutes.
  • Slice and serve with your favorite side dishes.
