For the Turkey Necks:
- 2 lbs turkey necks
- 2 tablespoons olive oil
- 1 onion diced
- 2 carrots sliced
- 2 celery stalks chopped
- 3 cloves garlic minced
- 2 cups low-sodium chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and black pepper to taste
Optional Additions:
- 1 tablespoon tomato paste for richness
- 1 tablespoon Worcestershire or soy sauce for depth
Prep the Turkey Necks: Rinse turkey necks under cold water, pat dry, and season generously with salt, pepper, and smoked paprika.
Sear the Necks: Heat olive oil in a large Dutch oven over medium-high heat. Brown the turkey necks on all sides for 3-4 minutes. Remove and set aside.
Sauté Aromatics: In the same pot, sauté onions, carrots, celery, and garlic until softened, about 5 minutes. Stir in thyme, bay leaves, and optional tomato paste.
Deglaze: Pour in chicken broth and scrape the bottom of the pot to release browned bits. Add turkey necks back to the pot.
Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally, until the turkey necks are tender and flavorful.
Serve: Remove bay leaves and serve turkey necks over rice, mashed potatoes, or alongside cornbread.
