What You’ll Need
- Carnation Evaporated Milk ½ cup – This is the secret to smooth, creamy fudge without graininess. It blends perfectly with sugar and chocolate, creating a rich, velvety texture.
- Sweetened Condensed Milk ½ cup – Adds extra creaminess and sweetness, ensuring your fudge stays soft and decadent.
- Semi-Sweet Chocolate Chips 3 cups – For deep, indulgent chocolate flavor. You can also mix dark and milk chocolate for a balanced taste.
- Unsalted Butter ½ cup, cut into cubes – Enhances the silky consistency and gives the fudge a rich, buttery finish.
- Granulated Sugar 1 ¾ cups – Helps develop the classic fudge consistency while adding the perfect level of sweetness.
- Vanilla Extract 1 teaspoon – A small amount elevates the chocolate flavor, adding depth and warmth.
- Salt ¼ teaspoon, optional – A pinch of salt enhances the chocolate and balances the sweetness.
Optional Add-Ins for Extra Flavor & Texture
- Chopped Nuts ½ cup – Walnuts, pecans, or almonds add a delicious crunch and contrast beautifully with the soft fudge.
- Mini Marshmallows ½ cup – For a fun, Rocky Road-style twist.
- Sea Salt Flakes for garnish – A sprinkle on top adds a gourmet touch and enhances the chocolatey richness.
- Espresso Powder ½ teaspoon – If you love a deep, bold chocolate flavor, a touch of espresso powder will intensify it.
- Bourbon or Rum 1 tablespoon – For an adult-friendly variation, a splash of your favorite spirit adds complexity and warmth.
Ingredient Substitutions & Variations
- Want sweeter fudge? Swap semi-sweet chocolate for milk chocolate.
- Prefer dark and intense flavors? Use bittersweet chocolate instead.
- Need a dairy-free version? Try coconut condensed milk and dairy-free chocolate.
Step 1: Prepare Your Baking Dish
Before you start, line an 8x8-inch or 9x9-inch square pan with parchment paper, leaving some overhang on the sides. This will make it easy to lift the fudge out once it has set. For extra non-stick insurance, lightly grease the paper with a little butter.
Step 2: Melt & Combine the Ingredients
In a medium-sized saucepan, combine the Carnation evaporated milk, sweetened condensed milk, granulated sugar, and butter.
Place the saucepan over low heat, stirring constantly until the butter has melted and the sugar has dissolved. This prevents any grainy texture from forming in the fudge.
Increase the heat slightly to medium-low, allowing the mixture to simmer gently. Stir frequently to prevent scorching, but do not let it boil.
Step 3: Stir in the Chocolate & Flavorings
Remove the saucepan from the heat and immediately add the semi-sweet chocolate chips. Stir continuously until the chocolate is fully melted and the mixture becomes smooth and glossy.
Add the vanilla extract and a pinch of salt. Stir well to distribute the flavors evenly.
If you’re adding mix-ins like chopped nuts, marshmallows, or espresso powder, fold them in at this stage for an extra layer of texture and flavor.
Step 4: Pour & Set the Fudge
Pour the warm fudge mixture into the prepared baking dish, spreading it evenly with a spatula.
If desired, sprinkle sea salt, crushed nuts, or extra chocolate shavings on top for a decorative finish.
Let the fudge cool at room temperature for about 30 minutes, then transfer it to the refrigerator to set completely. This will take at least 3 hours, but for the best texture, allow it to chill overnight.
Step 5: Slice & Serve
Once the fudge is firm, lift it out of the pan using the parchment paper overhang.
Use a sharp knife to cut it into bite-sized squares. For clean, professional-looking edges, warm the knife under hot water, wipe it dry, and slice with steady pressure.
Enjoy immediately, or store in an airtight container at room temperature for up to one week, or in the refrigerator for up to three weeks.
