Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 cup buttermilk
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon pure vanilla extract

For the Frosting:

  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • 2-3 tablespoons heavy cream

Instructions

Prepare the Cake Batter

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  • In another bowl, sift together flour, baking powder, baking soda, and salt.
  • Alternate adding the dry ingredients and buttermilk to the creamed mixture, starting and ending with the dry ingredients. Stir in vanilla extract.

Bake the Cake

  • Divide the batter evenly between the prepared pans.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Frosting

  • In a large bowl, beat the butter until creamy.
  • Gradually add powdered sugar, mixing well after each addition.
  • Stir in vanilla extract and heavy cream until the frosting reaches the desired consistency.

Assemble the Cake

  • Place one cake layer on a serving plate. Spread a layer of frosting on top.
  • Add the second cake layer and frost the top and sides evenly.

Decorate and Serve

  • Garnish with fresh berries or sprinkles, if desired. Slice and serve.

Chef’s Tips

  • Use room-temperature ingredients for a smoother batter.
  • For added flavor, brush the cake layers with simple syrup before frosting.
  • Store the cake in an airtight container at room temperature for up to 3 days.
