Ingredients
  

For the Filling:

  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 lb cooked breakfast sausage crumbled (or diced bacon)
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • Salt and black pepper to taste

For the Biscuit Topping:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 6 tbsp cold unsalted butter cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.

Prepare the Filling:

  • In a skillet, cook the sausage or bacon until fully done. Set aside.
  • Sauté the diced onion and bell pepper in the same skillet for 3-4 minutes.
  • In a mixing bowl, whisk eggs, milk, salt, and pepper.

Assemble the Base:

  • Spread the cooked sausage and sautéed vegetables evenly in the greased dish.
  • Pour the egg mixture over the sausage and vegetables. Sprinkle shredded cheese on top.

Make the Biscuit Topping:

  • In a mixing bowl, combine flour and baking powder.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Add milk and shredded cheese, mixing until just combined.

Add the Biscuit Topping:

  • Drop spoonfuls of biscuit dough evenly over the casserole.

Bake:

  • Bake the casserole in the preheated oven for 25-30 minutes or until the eggs are set, and the biscuit topping is golden brown.

Let It Rest and Serve:

  • Allow the casserole to rest for 5-10 minutes before serving. Garnish with fresh herbs like parsley or green onions if desired.
