Warm tortillas filled with tender chicken, creamy sauce, and melty cheese for a delicious family favorite.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup sour cream
- 1 cup shredded cheese (Monterey Jack or Cheddar)
- 1 can (10 ounces) cream of chicken soup
- 1 cup green enchilada sauce
- 8 small flour tortillas
- 1/2 cup diced onion
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
- Combine the chicken, sour cream, 1/2 cup of shredded cheese, and sautéed onion in a mixing bowl. Season with salt and pepper.
- Spoon about 1/4 cup of the chicken mixture onto each tortilla. Roll them up and place seam side down in a greased baking dish.
- Mix the cream of chicken soup with the green enchilada sauce, then pour over the rolled tortillas.
- Sprinkle the remaining cheese on top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
Add fresh cilantro, diced tomatoes, or guacamole for garnish. Serve with a side salad or refried beans for a complete meal.
