White Chicken Enchiladas

Description

Warm tortillas filled with tender chicken, creamy sauce, and melty cheese for a delicious family favorite.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup sour cream
  • 1 cup shredded cheese (Monterey Jack or Cheddar)
  • 1 can (10 ounces) cream of chicken soup
  • 1 cup green enchilada sauce
  • 8 small flour tortillas
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
  3. Combine the chicken, sour cream, 1/2 cup of shredded cheese, and sautéed onion in a mixing bowl. Season with salt and pepper.
  4. Spoon about 1/4 cup of the chicken mixture onto each tortilla. Roll them up and place seam side down in a greased baking dish.
  5. Mix the cream of chicken soup with the green enchilada sauce, then pour over the rolled tortillas.
  6. Sprinkle the remaining cheese on top.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!

Notes

Add fresh cilantro, diced tomatoes, or guacamole for garnish. Serve with a side salad or refried beans for a complete meal.
