Description

Fluffy and delicious vegan pancakes that are perfect for breakfast or brunch, made with simple ingredients.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 1/4 cups almond milk (or any non-dairy milk)
  • 1 tablespoon coconut oil (melted)
  • 1/2 teaspoon vanilla
  • 1 banana (finely mashed)
  • Cooking spray for the griddle
  • Pure maple syrup or agave for topping
  • Optional: 1 cup mix-ins such as fruit, nuts, or chocolate chips


Instructions

  1. In a large mixing bowl, sift together the flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate medium bowl, mix together the almond milk, vanilla, coconut oil, and mashed banana until well combined.
  3. Create a well in the center of the dry mixture and pour in the wet ingredients. Gently stir until just combined.
  4. If you’re using any mix-ins, fold them in lightly.
  5. Preheat a non-stick griddle or skillet over medium heat.
  6. Pour 1/2 cup of batter onto the griddle. Cook for about 4-5 minutes on each side until golden brown.
  7. Once cooked, stack the pancakes and top with your favorite toppings.

Notes

Let the batter rest for a few minutes for fluffier pancakes. Don’t rush the cooking process to avoid burning.
