Description

Start your day with a warm stack of fluffy pancakes infused with vanilla and cinnamon.


Ingredients

  • 2 cups all-purpose flour
  • 3 Tbsp white sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 cups buttermilk
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 egg
  • 1/4 cup melted butter


Instructions

  1. Melt butter and let it cool slightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, vanilla, cinnamon, and egg. Add melted butter and whisk again.
  4. Pour wet mixture into dry ingredients and stir gently until just combined (lumps are fine—do not overmix).
  5. Heat a skillet or griddle over medium-low heat, add a little butter, and pour batter in 1/4–1/3 cup portions. Cook for 2–3 minutes until bubbles form and edges look set. Flip and cook 2 more minutes.
  6. Stack, drizzle with syrup, and enjoy warm.

Notes

Don’t overmix — lumps in the batter mean fluffier pancakes. For extra flavor, add a pinch of nutmeg. Keep pancakes warm in a low oven (175°F) until serving.
