Description

Transform your breakfast into a whimsical feast with these colorful and fluffy unicorn pancakes, perfect for special occasions or a fun family breakfast.


Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 2 eggs (beaten)
  • 1 ¾ cups milk
  • ¼ cup (½ stick) butter, melted but cooled slightly
  • Whipped topping
  • Rainbow sprinkles
  • Blueberries (2 for each unicorn)
  • Sugar cone (1 for each unicorn)
  • Cooked bacon (1 slice for each unicorn)
  • M&Ms (2 for each unicorn)


Instructions

  1. Whisk together the dry ingredients: flour, sugar, salt, and baking powder in a medium bowl.
  2. In another bowl, whisk the eggs, milk, and vanilla together. Gradually add the melted butter to the wet ingredients.
  3. Make a well in the center of the dry mix, then pour the wet ingredients into this well. Stir until combined; a few lumps are okay. Let the batter rest for at least 5 minutes.
  4. Preheat a griddle to 300°F. Lightly coat it with non-stick cooking spray or butter.
  5. Pour about 1 cup of batter onto the griddle for the main body of the unicorn. Use ½ to ⅔ cup for the snout.
  6. Cook until bubbles form on the surface, then flip and cook for an additional 2 to 3 minutes until golden and cooked through.
  7. Assemble by placing the larger pancake on a plate as the unicorn’s face. Position the smaller pancake near the bottom as the snout.
  8. Create a snout by cutting two small slits and inserting an M&M into each.
  9. For the eyes, place blueberries above the snout. Cut the bacon into pieces to form ears and place them on top of the larger pancake.
  10. Use whipped topping to create a colorful mane, adding rainbow sprinkles for flair. Top with a sugar cone as the unicorn horn. Serve and enjoy!

Notes

For fluffier pancakes, do not overmix the batter and let it rest before cooking. Use gel food coloring for vibrant colors.
