Delicious and easy to make loaded quesadillas packed with chicken, veggies, and gooey cheese.
Ingredients
- 2 large tortillas
- 1 cup cooked, seared chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Oil for cooking
Instructions
- Heat a drizzle of oil in a skillet over medium heat.
- Add the sliced onion and bell pepper, sautéing until they soften (about 3-4 minutes).
- Stir in the shredded chicken, chili powder, cumin, salt, and pepper. Cook until everything is heated through.
- Place one tortilla in the skillet and sprinkle cheese on one half. Spoon the chicken and veggie mixture on top, then fold the tortilla over.
- Cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
- Repeat with the second tortilla.
- Slice and serve hot.
Notes
Serve with guacamole, salsa, or a light salad. Consider topping with cilantro or hot sauce for extra flavor.
