Description

Delicious and easy to make loaded quesadillas packed with chicken, veggies, and gooey cheese.


Ingredients

  • 2 large tortillas
  • 1 cup cooked, seared chicken, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for cooking


Instructions

  1. Heat a drizzle of oil in a skillet over medium heat.
  2. Add the sliced onion and bell pepper, sautéing until they soften (about 3-4 minutes).
  3. Stir in the shredded chicken, chili powder, cumin, salt, and pepper. Cook until everything is heated through.
  4. Place one tortilla in the skillet and sprinkle cheese on one half. Spoon the chicken and veggie mixture on top, then fold the tortilla over.
  5. Cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
  6. Repeat with the second tortilla.
  7. Slice and serve hot.

Notes

Serve with guacamole, salsa, or a light salad. Consider topping with cilantro or hot sauce for extra flavor.
