Description

A quick and easy tuna pasta salad that’s perfect for picnics, potlucks, or light dinners. Creamy, filling, and delicious!


Ingredients

  • 8 ounces pasta (rotini or penne recommended)
  • 1 can (5 ounces) tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)


Instructions

  1. Cook the pasta in a pot of salted boiling water according to the package directions until al dente. Drain well.
  2. Cool the pasta to room temperature, or rinse briefly under cool water and drain thoroughly.
  3. Combine the cooled pasta, drained tuna, cherry tomatoes, celery, and red onion in a large bowl, breaking the tuna into bite-size chunks.
  4. Make the dressing by stirring together the mayonnaise, lemon juice, salt, and pepper in a small bowl until smooth.
  5. Toss the dressing over the pasta mixture and gently mix until evenly coated. Cover and refrigerate for at least 30 minutes before serving. Garnish with parsley if desired.
