Description

A stunning and delicious dessert that combines layers of creamy goodness with tart, juicy blueberries.


Ingredients

  • 1 cup brown sugar
  • 1 cup pecans, chopped
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 cups blueberries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix brown sugar, chopped pecans, and melted butter in a bowl until well combined.
  3. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  4. Bake the crust for 10-12 minutes, then let it cool.
  5. Beat together cream cheese and powdered sugar in another bowl until smooth.
  6. Whip the heavy cream in a separate bowl until soft peaks form, then fold it into the cream cheese mixture until combined.
  7. Spread the cream cheese mixture over the cooled crust.
  8. Cook blueberries, sugar, and lemon juice in a saucepan over medium heat until the blueberries start to burst and the mixture thickens slightly.
  9. Pour the blueberry topping over the cream cheese layer.
  10. Refrigerate for at least 240 minutes or until set.
  11. Serve chilled and enjoy!

Notes

The dessert can be made a day in advance and may taste better after the flavors meld. For a firmer dessert, allow it to chill longer.
