A stunning and delicious dessert that combines layers of creamy goodness with tart, juicy blueberries.
Ingredients
- 1 cup brown sugar
- 1 cup pecans, chopped
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 cup heavy whipping cream
- 2 cups blueberries
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Mix brown sugar, chopped pecans, and melted butter in a bowl until well combined.
- Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
- Bake the crust for 10-12 minutes, then let it cool.
- Beat together cream cheese and powdered sugar in another bowl until smooth.
- Whip the heavy cream in a separate bowl until soft peaks form, then fold it into the cream cheese mixture until combined.
- Spread the cream cheese mixture over the cooled crust.
- Cook blueberries, sugar, and lemon juice in a saucepan over medium heat until the blueberries start to burst and the mixture thickens slightly.
- Pour the blueberry topping over the cream cheese layer.
- Refrigerate for at least 240 minutes or until set.
- Serve chilled and enjoy!
Notes
The dessert can be made a day in advance and may taste better after the flavors meld. For a firmer dessert, allow it to chill longer.
