A colorful and flavorful tri-color pasta salad that is perfect for summer picnics or family gatherings. This dish combines rotini pasta, fresh vegetables, and zesty Italian dressing for a delightful experience.
Ingredients
- 8 oz rotini pasta (or any short pasta of your choice)
- 1 cup Italian dressing (store-bought or homemade)
- 8 oz mozzarella cheese (cubed or mini balls)
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup black olives (sliced)
- 1 cup cherry tomatoes (halved)
Instructions
- Cook the rotini according to package instructions. Once done, drain the pasta and set aside to cool.
- In a large mixing bowl, combine the cooled pasta, cubed mozzarella cheese, chopped bell peppers, sliced black olives, and halved cherry tomatoes.
- Pour a generous amount of Italian dressing over the salad, mixing everything together until it’s evenly coated.
- Chill for at least 30 minutes or serve immediately.
Notes
For a unique twist, consider substituting the mozzarella with feta cheese or adding grilled chicken for extra protein.
