A colorful and flavorful tri-color pasta salad that is perfect for summer picnics or family gatherings. This dish combines rotini pasta, fresh vegetables, and zesty Italian dressing for a delightful experience.


Ingredients

  • 8 oz rotini pasta (or any short pasta of your choice)
  • 1 cup Italian dressing (store-bought or homemade)
  • 8 oz mozzarella cheese (cubed or mini balls)
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup black olives (sliced)
  • 1 cup cherry tomatoes (halved)


Instructions

  1. Cook the rotini according to package instructions. Once done, drain the pasta and set aside to cool.
  2. In a large mixing bowl, combine the cooled pasta, cubed mozzarella cheese, chopped bell peppers, sliced black olives, and halved cherry tomatoes.
  3. Pour a generous amount of Italian dressing over the salad, mixing everything together until it’s evenly coated.
  4. Chill for at least 30 minutes or serve immediately.
