Description

Ingredients

  • 2 boneless, skinless Chicken Breasts
  • 2 tablespoons Olive Oil (for searing)
  • 3 cloves Garlic (fresh, minced)
  • 2 cups Spinach (fresh or frozen)
  • 1 cup Chicken Broth (low sodium)
  • 1 cup Heavy Cream (for the sauce)
  • 1/2 cup Parmesan Cheese (grated, plus extra for serving)
  • 1 teaspoon Italian Seasoning (or your favorite herbs)
  • Salt and Pepper (to taste)


Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, until golden and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook until fragrant—about 30 seconds.
  4. Stir in the spinach and a splash of chicken broth. Cook until spinach wilts.
  5. Reduce the heat and add heavy cream, Parmesan, and Italian seasoning. Stir until smooth and bubbly.
  6. Return the chicken to the skillet, allowing it to soak up the sauce. Cook for an additional minute or two until everything is heated through.
  7. Plate and garnish with extra Parmesan and a sprinkle of herbs.

Notes

You can substitute heavy cream with a lighter alternative, but it may alter the richness of the sauce.
