Ingredients
- 2 boneless, skinless Chicken Breasts
- 2 tablespoons Olive Oil (for searing)
- 3 cloves Garlic (fresh, minced)
- 2 cups Spinach (fresh or frozen)
- 1 cup Chicken Broth (low sodium)
- 1 cup Heavy Cream (for the sauce)
- 1/2 cup Parmesan Cheese (grated, plus extra for serving)
- 1 teaspoon Italian Seasoning (or your favorite herbs)
- Salt and Pepper (to taste)
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and cook until fragrant—about 30 seconds.
- Stir in the spinach and a splash of chicken broth. Cook until spinach wilts.
- Reduce the heat and add heavy cream, Parmesan, and Italian seasoning. Stir until smooth and bubbly.
- Return the chicken to the skillet, allowing it to soak up the sauce. Cook for an additional minute or two until everything is heated through.
- Plate and garnish with extra Parmesan and a sprinkle of herbs.
Notes
You can substitute heavy cream with a lighter alternative, but it may alter the richness of the sauce.
