Description

Replicate Texas Roadhouse’s famous Smothered Chicken featuring juicy grilled chicken breasts topped with sautéed mushrooms, onions, and melted Monterey Jack cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup Italian dressing (for marinade)
  • 1 sweet yellow onion, sliced
  • 8 oz mushrooms, sliced
  • 1 tbsp olive oil
  • 1 cup Monterey Jack cheese, grated
  • Salt and pepper, to taste


Instructions

  1. Marinate the Chicken: Place the chicken breasts in a zipper freezer bag and pour the Italian dressing over them. Seal the bag and refrigerate for at least 30 minutes (or overnight for more flavor).
  2. Grill the Chicken: Preheat the grill to 350°F (medium heat). Place the chicken on the grill and cook for 5-8 minutes per side. Stir the onions and mushrooms in olive oil and add them to the grill pan. After the chicken is golden and cooked through (165°F internal temperature), remove the chicken and set it aside.
  3. Cook the Veggies: Sauté the onions and mushrooms on the grill for 10-15 minutes, until softened and slightly caramelized.
  4. Assemble the Smothered Chicken: Place the chicken back on the grill or in a grill-safe pan. Top each breast with the sautéed onions and mushrooms, followed by a generous sprinkle of grated Monterey Jack cheese.
  5. Melt the Cheese: Lower the grill heat to 300°F, close the lid, and let the cheese melt for 2-3 minutes. Remove from the grill and allow the chicken to rest for a few minutes before serving.

Notes

For variations, you can swap cheese for chicken gravy, use pork chops instead of chicken, or add more vegetables like spinach or bell peppers.
