Ingredients
- 3–4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- 1 cup shredded Jack cheese
- Chopped green onions, for garnish
- Paprika, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Pat chicken breasts dry with paper towels and rub with olive oil. Season with salt and pepper.
- Heat a skillet over medium-high heat and sear chicken for 5 minutes on each side until golden brown.
- Reduce heat to medium, add minced garlic, and sauté for about 30 seconds.
- Pour chicken broth into the skillet and scrape the bottom to deglaze.
- Stir in sour cream until the sauce is smooth; let it simmer for 5 minutes.
- Transfer chicken to a baking dish, spoon sauce over the top, and sprinkle with cheese.
- Bake for 15 minutes until cheese is melted and bubbly. Garnish with green onions and paprika before serving.
Notes
For extra flavor, consider adding a splash of white wine after sautéing the garlic. Serve with mashed potatoes or a fresh salad for a complete meal.
