Description

Replicate Texas Roadhouse’s famous Smothered Chicken featuring grilled chicken breasts topped with sautéed mushrooms, onions, and melted Monterey Jack cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup Italian dressing (for marinade)
  • 1 sweet yellow onion, sliced
  • 8 oz mushrooms, sliced
  • 1 tbsp olive oil
  • 1 cup Monterey Jack cheese, grated
  • Salt and pepper, to taste


Instructions

  1. Marinate the chicken by placing it in a zipper freezer bag and pouring the Italian dressing over it. Seal the bag and refrigerate for at least 30 minutes.
  2. Preheat the grill to 350°F (medium heat). Grill the chicken for 5-8 minutes per side, while sautéing the onions and mushrooms in olive oil in a grill pan.
  3. After the chicken is cooked through (165°F internal temperature), set it aside and sauté the veggies for about 10-15 minutes until softened and caramelized.
  4. Place the chicken back on the grill and top each breast with the sautéed vegetables and cheese.
  5. Lower the grill heat to 300°F and close the lid for 2-3 minutes until the cheese melts. Let it rest for a few minutes before serving.

Notes

You can substitute chicken thighs for the breasts. Serve with mashed potatoes, rice, or roasted vegetables.
