Ingredients
- 12 jumbo pasta shells
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans, rinsed and drained
- 1 cup corn, drained
- Chopped green onions for garnish
- Sour cream for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the jumbo pasta shells as per package instructions until al dente, then drain them gently and set aside.
- Cook ground beef or turkey in a skillet over medium heat until browned, draining any excess fat.
- Stir in taco seasoning, salsa, black beans, and corn, cooking until heated through.
- Stuff each pasta shell with the taco mixture and arrange in a baking dish.
- Top with shredded cheese.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
- Garnish with chopped green onions and serve warm, optionally with sour cream.
Notes
For extra flavor, consider adding jalapeños or fresh cilantro. Feel free to substitute ground turkey for a leaner version.
