Description

A savory twist on a classic favorite, combining taco flavors with cheesy pasta shells for a delightful weeknight meal.


Ingredients

  • 12 jumbo pasta shells
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, rinsed and drained
  • 1 cup corn, drained
  • Chopped green onions for garnish
  • Sour cream for serving (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the jumbo pasta shells as per package instructions until al dente, then drain them gently and set aside.
  3. Cook ground beef or turkey in a skillet over medium heat until browned, draining any excess fat.
  4. Stir in taco seasoning, salsa, black beans, and corn, cooking until heated through.
  5. Stuff each pasta shell with the taco mixture and arrange in a baking dish.
  6. Top with shredded cheese.
  7. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
  8. Garnish with chopped green onions and serve warm, optionally with sour cream.

Notes

For extra flavor, consider adding jalapeños or fresh cilantro. Feel free to substitute ground turkey for a leaner version.
