Description

A vibrant dish combining the bold flavors of tacos with hearty pasta, perfect for barbecues and casual dining.


Ingredients

  • 8 ounces pasta (rotini or similar)
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 2 cups crushed Doritos
  • 1/2 cup ranch dressing
  • 1/4 cup salsa


Instructions

  1. Cook the pasta according to package instructions. Once done, drain and set aside.
  2. Prepare the beef by browning it in a skillet over medium heat. Drain excess fat and stir in the taco seasoning according to the package directions. Allow it to cool slightly.
  3. Combine the cooked pasta, seasoned beef, cherry tomatoes, corn, black beans, diced bell pepper, and shredded cheddar cheese in a large bowl.
  4. Add ranch dressing and salsa, gently folding to ensure everything is well coated.
  5. Mix in crushed Doritos just before serving for an irresistible crunch.
  6. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Best enjoyed cold.
